For a breakfast or dinner a tortilla buffet with potatoes and sausages is ideal.

  • 400 g boiled potatoes in shell
  • 2 sausages fried
  • 2 tablespoons butter
  • 4 eggs
  • 2 tablespoons sour cream
  • 1 link parsley
  • salt

RECIPE PREPARATION Tortilla with potatoes and sausages:

We peel the boiled potatoes, cut them into slices and heat them a little in butter. Separately, beat eggs with sour cream and chopped parsley. Put the potatoes and sausages in a bowl, pour the egg mixture and bake for 30 minutes.

You can also put the paprika on top. When it is ready, cut it into cubes and serve it hot or cold. Good appetite


4 potatoes
1 onion (optional)
8 eggs
1-2 cups olive oil (neutral taste)
1 slice of lemon peel
salt pepper

Preparation Potato tortilla

  1. Cut the potatoes into thin slices (not as thin as for chips, but thin). If you put onions, cut them into thin slices.
  2. Heat oil and when hot, add potatoes, onions and lemon peel. The oil should be enough to cover the potatoes. "Boil" everything over medium to low heat for 15-20 minutes, until potatoes are done. The oil doesn't have to be hot because now we just smother the potatoes, we don't fry them.
  3. Remove the potatoes in a sieve and let them drain from the oil.
    * Potato oil can be reused, do not throw it away.
  4. Beat eggs with salt and pepper. Add more salt because the potatoes will come in the composition.
  5. Add the potatoes over the eggs and mix well.
  6. In a pan 25 cm in diameter, heat 1-2 tablespoons of oil (from the one used for potatoes).
  7. Add the egg and potato mixture to the pan. Bake the omelette over low heat for 5 minutes, until nicely browned on the bottom.
  8. Place a wide plate over the pan and with a sure movement turn the omelet over.
  9. Put the pan back on the heat and heat 1 tablespoon of oil. Let the omelette "drain" from the plate in the pan. Fry on the second side, still on low heat for 5-7 minutes (as you like to make the egg). With a knife you can pierce the omelet a little to see how it is in the center.
  10. Pour the omelette on the plate and cut it into 4 (if it's for breakfast) or cubes when it has cooled a bit (if you serve it as an appetizer). It's good hot or cold.
